Joomla! 2.5.0 Server Requirements
Joomla 2.5.0 was released on January 24th, 2012, and apart from version number change (skipping versions 1.8, 1.9, 2.0, ...) it brings 26 new features and 4 security fixes. An automatic update from Joomla 1.7 is recommended.
Most modern hosts should be fine since version 2.5.0 is not very different than 1.7.0.

Joomla 1.7 was released recently, and it is quite an update.
As for the hosting, Joomla 1.7 requirements are similar to Joomla 1.6, so most modern hosts should be fine.

Joomla 1.6 was released recently, and it's quite an update over previous Joomla! 1.5. Also the release cycle has been changed to be faster. Soon we will see Joomla! 1.7. There must be still a lot of work, so perhaps you can contribute? You can help in translating part of documentation or tutorial, or, if you are familiar with PHP, you can find and fix bugs.

Web server survey for November 2011 performed by Netcraft returned almost 526 mil web sites.
Apache web server still has the largest share, at 65%, with Microsoft IIS at second place at 15.4%, nginx at third place at 8.5% and Google web server at 3.4%.
Web Server survey - February 2010
Web server survey for February 2010 performed by Netcraft returned over 207 316 000 web sites. The drop of about 20 milion sites from previously reported numbers is a result of changes in QQ.com provider, which changed most of its blogs to private.
Apache web server still has the largest share, at 54.4%, with Microsoft IIS at second place at 24.6%. Google web server continue to increase its share, now it is at 6.9%. Nginx's market share decreased a little because of decrease in active blogs at Wordpress.com.
